Black Cumin
Black cumin (""Kala Jerra"") is not related to Cumin; more similar to caraway in flavour, or Fennel but sweeter and more lemony.
It is rarely used in western cuisine.
Medicinal uses are in flighting of infection and diabeties.
Cardamom
Cardamom is used world over in both sweet and savoury dishes. It's intense, aromatic, unique taste meets it's pungent, spicy, citrusy fragrance.
Cardamom provides anti-bacterial and anti-oxidant properties.
Licorice
Licorice is the legume of a bean plant. It has a similar flavour to Star Anise and fennel though not related.
Highly aromatic, it is used in herbal, traditional medicines, sweets and tabacco flavouring. The anti-inflamatory properties aid the digestive system and relief of stress and chest infections.
Saffron
Saffron is the most precious and expensive spice in the world. Harvesting the crop is labour intensive. Part of the Iris family, each Saffron Crocus (Satirus) has three thread like stigma which are picked manually.
With a sweet smell it is used in tiny amounts as a seasoning and colouring agent.
