SEED SPICES
Anise
Anise is not related to the similarly named Star Anise. It has a licorice like flavour used in sweets, liquers, curries, Hoison sauce and meat flavourings.
Ajwain
Also known as "Caron" and a close relative to Caraway though very different in flavour. Ajwain is a little known spice combining flavours like Thyme, Anise and Cumin.
Caraway Seed
Caraway is a distant relative of Black Caraway though a close relative to Ajwan. Caraway is used as a digestive aid and in cooking of bread, cakes and added to fruits.
Cumin
Cumin, also known as "Jeera" requires a long hot summer to grow. It is used in a wide range of ethnic cooking around the globe.
Dill
Dill is similar in flavour to Caraway and is used in cooking of meats, breads and pickles.
Fennel
A hardy perenial in many countries. Once infamous as the flavouring of Absinthe, now more commonly drunk as a tea.
Commonly used in egg, fish and salad dishes.
